Recipe: French Toast

The secret to good French Toast lies in the bread. You need something that is light and fluffy so that it absorbs the heavenly custard you soak it in. Brioche loaves are highly recommended. The bread must also be thickly sliced so that you have more to eat in order to avoid it breaking apart on you during the soaking process. 

This loaf of bread is from Sun Moulin bakery (one branch in One Utama, one in KLCC). It is called "Queen Bread" and goes for RM10 for eight thickly-cut slices. 

This is the bread to use for the best French Toast you'll ever have. And given that bread is the main ingredient, I think its worth getting a good loaf. 


The other secret to good French Toast is the custard. Have you ever made French Toast with only egg yolks?

If you have not, then my friend - you haven't lived. 


Now the last thing (I promise) to French Toast that rivals these would be to fry them in  butter until you get that crispy, golden crust we all love. 

Butter and chocolate ganache makes the world a much safer, happier place to be in. 

Now if you followed all these steps, you would've made a very very decent French Toast. But if you want to take it from very very decent to mind-blowingly awesometastic, you would top it with these:



Bacon for your daily intake of protein, bananas for potassium and mascarpone cheese for calcium. The bread is your essential carb of course.

So now you can justify to yourself that you're eating a balanced meal.

Ingredients:
4 slices of thick cut Queen's Bread/brioche loaf (a day or two old is best)
4 egg yolks
1/4 cup heavy cream, 1/4 cup whole milk
1 tsp vanilla essence
1 tbsp sugar
1 tsp cinnamon
Zest of 1/2 lemon (optional)
Pinch of salt
Butter 

(Toppings) - Put whatever you want on these. I went for:
Salty bacon strips
Caramelized bananas (sugar and butter in pan, add bananas)
Mascarpone cheese (whipped with a little bit of sugar)
Warm maple syrup/honey
Icing sugar (for garnish)

1. In a shallow bowl/plate (big enough to fit your bread slices), whisk together egg yolks, cream,milk,vanilla, sugar, cinnamon, zest, and salt)
2. Dip bread slices in mixture, coating both sides rather well. Do not over soak or your bread will fall apart. 
3. In a hot pan, melt some butter until nice and hot. Pan fry each slice until golden brown,
4. Serve on warm plates with any toppings that your heart desires. 

p/s: Make sure to flood these with warm maple syrup or honey.
