Recipe: Mashed Potatoes

The truth is, I don't want to share this recipe.

Really.

Because I do not want to share the limelight of being that one person at potlucks where people gush and ask, "What on earth do you put in that to make it taste sooo good?"

But it does get lonely at the top.

So I will. But I can't promise that over time when people stop asking me for my autograph, that I won't take this down.

I would write the recipe down if I were you.

There are a few steps to making mashed potatoes so luscious and smooth without using any cream or milk.

The first thing  you must do is to peel and cut washed potatoes into cubes relatively the same size.

Then you must rinse it under cold water until it runs clear.

There is a reason to this. Something about it removing excess starch and making your potato less gummy.

It also (insert scientific reason).

Just do it, okay?

Next you need garlic. Alot of garlic.

I usually do one fat clove per one potato.

Yes I know why I am still single.

Then you must cook your potatoes.

People usually boil them in lightly salted water (and wait 30mins for their mashed potatoes). I like to microwave mine on HIGH for 10 minutes until it is mash-able.

I am very impatient as you can tell.

Yes. I know why I'm still single.

Now here is the secret ingredient: Butter.

Not just butter. Alot of butter.

How much you say? I would go 1/2 cup to 4 potatoes. And a little more if I am stressed out by unemployment or bad weather.

This isn't a low fat dish.

Yes I know why I'm still single.

This is good very very very very good.

It's so good I don't even classify it as a lowly side dish.

This mashed potatoes is the main attraction.

Make it. Make it. Make it. Make it. Make it.

Ingredients:
4 potatoes, peeled, cut into 1inch cubes
1/2 cup room temperature butter
4 cloves of garlic, smashed
Salt and pepper to taste

1. Rinse potato cubes under cold water until water runs clear. Drain.
2. Peel garlic cloves, mash lightly with back of a knife.
3. Microwave potatoes with garlic cloves until soft. (Depends on your microwave). Alternatively, you can boil them for 30minutes until tender.
4. Mash potatoes with butter.
5. Season to taste.
6. Eat right out of bowl.

Happy mashing.
