Bak Kua Sandwich.

Every Chinese New Year, our family eats enough bak kua or Chinese pork jerky to feed a Somalian village. 

Or rather, I do. 

Growing up, I ate these heavenly dead meat things in a simple sandwich. We would take them to school and hide them from our Muslim friends or tell them its 'ayam'. 

This recipe has three ingredients, three steps and three million calories


You will need the best quality bak kua you can find. I like only eat the pork ones but by all means use chicken and destroy a hundred years of tradition.



Please only use white fluffy bread for this sandwich. The ones with the empty calories and bad carbohydrates that'll go straight to your ass. 


And you will need butter. (I can tell you're not surprised anymore).



Step One. Butter your bread generously with butter. And I mean really plaster it on as if your life depends on it.


Step Two: Put a piece of bak kua in between the slices of bread. I would put two, but my mother said no because I can no longer fit into my clothes there would not be enough for the rest of the family. 



The last and final step is to nuke the sandwich in your microwave on HIGH for 30 seconds.

This step is crucial because it melts the butter and makes the meat soft and the fat soaks into the bread.


JUST DO IT OKAY.



Sitting in my kitchen with grease shiny on my lips and fingertips - it's easy to see why this simple sandwich holds such a special place in my heart.
